Me: Yes, Sara
Sara: Can you make broccoli casserole for supper tomorrow night?
Me: Yes, Sara. Now go to sleep.
After I answered I realized I had commited something to my 7 year old and there was no turning back. Really though, how does a 7 yr old automatically come up with a request like that? (She really loves broccoli casserole though)
So, yesterday, before I headed out to work for my 8 hour evening shift, I cooked up a meal of sweet n sour meatballs, rice, AND BROCCOLI CASSEROLE!
I was at work, of course, during their supper so I called home and asked to speak with Sara.
She came to the phone and immediately said, "THANK-YOU Mommy for making broccoli casserole!!". I could hear the excitement and gratitude in her voice. Makes it all worth it!
Anyway, here is the recipe I used for the broccoli casserole:
Curry-Chicken Broccoli Casserole
2 (10 oz.) pkgs. frozen broccoli, cooked or 2 bunches fresh broccoli, cooked
3 c. sliced, cooked chicken (can be cut bite-sized) (4 half breasts)
Sauce:
2 cans cream of chicken soup
1 cup Miracle Whip
2 tsp of curry powder
Use a 9x13 casserole dish. Layer cooked broccoli on the bottom, followed by the chicken, then the sauce and finally sprinkle with the cheese. Top the casserole with buttered croutons or bread crumbs. Bake at 350 degrees for 25-30 minutes until bubbly.

On a sad scrappy note: Still no scrappy mail!!!
Some of you know what I'm referring too, and are probably waiting for the same scrappy mail. For those of you who do not know what I'm referring to, let's just say...well, let's not say anything, because I think this particular company has already received enough backlash already.
